Easy Vegan Recipes for Lunch


Lunch… the meal in the middle of the day that gives you the opportunity to sit down for while, eat a nice meal and relax. Whether it’s in company with your work mates or in solitude, enjoying your own company, you should not skip that chance of a refreshing break and refilling your energy and nutrition depots.

So here comes some easy vegan recipes for lunch! They are chosen as to not take too long to prepare, and to be easy to take with you and reheat (or maybe eat cold) at work.

    I recently watched the documentary, “What the Health,” and was appalled at what the FDA, USDA and BIG PHARMA as well as other corporations are doing to murder the American people. This film has empowered me to take my health into my own hands. I have 60 lbs. that I have struggled to lose for the last 3 yrs. I have eliminated many foods because I lost my gall bladder in 2014 due to very bad food choices. I am suffering with hyperthyroidism, arthritis, asthma, low blood sugars, and hormonal issues. I am currently taking 1 medication for thyroid problem, and progesterone, testosterone, estrogen. I take supplements Vitamin D3, Calcium, Probiotic. I try to exercise but pain limits me very much as to what I can do. Swimming helps but pools are not open year around. My goal is to stop taking all medications in one year or less. In the film they had people that were worse of than me. In only 2 weeks of switching to a plant based diet they were able to get off of most if not all of their medications, and had lost weight to boot. I am 63 years old and need to go back to work without the chronic pain I have suffered for the last 13 years. Medical cannabis has helped take the edge off the pain but not enough for me to return to gainful employment. I believe losing 60 lbs. will help me to accomplish this goal.

      Good on you to take responsability for your health! I think you will find that a vegan diet is very beneficial for you. Do whatever exercise you are able to do and be proud of yourself for doing it. Wish you the very best health from now on!
