Easy Cream Broccoli Soup


This is a quickly made and really tasty lunch meal. You need a blender or a rod mixer to make it smooth. I prefer it served hot, but you can also enjoy it cold if you don’t have the opportunity to heat it. This is by far the best easy cream broccoli soup I know!

Easy Cream Broccoli Soup

Β You need:

This gives you four servings.

  • 500 gr broccoli
  • 1 onion
  • Olive oil
  • 4,5 cups (1 Litre) of water
  • 2 Vegetable stock cubes
  • 0,5 cup of soy sour cream mixed with soy cream cheese
  • Salt and black pepper to your liking
How to prepare:

Cut the broccoli in pieces, slice the stem thinly. Chop the onion and sizzleΒ in the olive oil on low heat until soft. Add water, stock cubes and broccoli, and let it boil (use lid) for 5 minutes.

Then either pour into blender or use a rod mixer, and blend the soup until it’s smooth. Now add the soy sour cream mixed with soy cream cheese, and blend until mixed.

Serving suggestion:

Dry roast sunflower seeds and sprinkle on top right before enjoying your plate of soup. (Dry roast a whole package of them at once using your oven, and then you can just take some with you when you like!)

    MMMM easy cream broccoli soup sounds amazing. Is there anything you can recommend as a substitute for sour cream? I don’t know why, sour cream always gives my stomach a hard time. i’ve never heard of the method with sunflower seeds. I must say that is truly original. Looking forward to more of your recipes!

      Hi, it is amazing! But I don’t want to give you a belly ache though. Have you tried the soy sour creme that I use in this recipe? Maybe that is easier on your stomach. Let me know how it worked for you if you try it!

    I do so love broccoli anyway at all so making it to a soup sounds quite delicious!

    I thought the idea of the sunflower seeds seemed to be quite original, maybe it’s not but it’s definitely something I’ve never done.

    I wouldn’t use soy but maybe coconut cream would be equally as yummy. Yes, I must do this as it’s something really easy, and sometimes easy is good! πŸ™‚

      You can absolutely substitute the soy with something else that you like. And if you’re not a vegan you can of course use dairy products, like Creme fraiche. The sunflower seeds becomes sooo tasty when you dry roast them!

    It’s funny, I’m not a fan of broccoli while it is raw, but give me a soup and I’m all about that green veggie. This sounds delicious! I also love that the recipe doesn’t call for a lot of ingredients either. If I keep this in the fridge, how long do you think it’ll last?

      Hi Steph, broccoli is a great vegetable! you can eat it raw, steam it, use it in soups, gratins and pies. And it’s so nutricious, sometimes called a superveggie.

      How long you can keep it in your fridge depends a lot on how fast you are able to chill it. The faster the better = the longer it will keep fresh. The temperature in your fridge also matters. I’d say it will be fine for at least two days, and up to a week if you’ve chilled it fast and turned your fridge thermostate down (which is good for all your food).

      You can put inthe freezer as well!

    This recipe is the best of both worlds. I look forward to trying this, just after I go to Earth Fare and pick up more fresh broccoli. I’ve only blanched in the freezer now.

    Broccoli is one of my favorite vegetables. I never thought I could make a soup out of it. I am just starting to learn how to cook, and your recipe will be in my list as it is simple and easy. Is there a specific brand of vegetable stock cubes that I should use?

      Hi Chris! Broccoli is a great vegetable, super nutritious and, at least in my opinion, super tasty.

      I prefer to use organic stock cubes, that way I know it’s free from pesticides and it usually tastes better too.

      Please come back and try some of the other recipes out as well! I’m continously adding new ones, only yesterday I added one for the best chocolate chip cookies I’ve tasted πŸ™‚

    This recipe sounds good. Although I have never eaten vegan before, so I’m not sure how the soy products taste. I think you should add a picture of the finished product. People like to see what they are making it helps determine weather or not it looks right. May I ask why vegan? And if it was someone like me who has never had vegan could you use regular cream cheese and sour cream? Just curious, its a great page good job.

I’m creating this site because my daughter went vegan a few months ago, and it’s been a steep learning curve for me to cook for her (even though I’m a vegetarian myself!). I want to help others who have either decided for themselves to go vegan, or has a family member to ccok for, or are just curious about the vegan lifestyle!

      You can absolutely use regular cream cheese and/or sour cream, but do try the soy products and treat yourself to a new experience!

      Hi there Pierre! Pity you can’t stand the taste, but maybe you have only tried frozen and boring broccoli? If you try fresh and just steam it gently, maybe that would do it πŸ™‚

      Hmm, maybe you could try cauliflower? I haven’t tried to substitute the broccoli with that in this recipe, but soup made with cauliflower is delicious, a mild creamy taste. Actually, I think it will work well as a substitute. so instead of easy cream broccoli soup you will get easy cream cauliflower soup πŸ˜‰

    This broccoli vegan soup sounds delicious and I already tweeted it! It’s so funny, because last month I went vegan and wrote a three-part blog about it.

    I was too lazy, distracted and the weather was too hot for cooking. I mostly just heated things up from the freezer or threw some peanut butter on a tortilla. Your site would have been brilliant for me!

    Speaking of soup, I just came back from Provence, where I took a cooking class one day, and learned something new– this chef made a somewhat creamy soup but without any milk or milk-substitute product. Instead he used big bread crumbs! Neat, huh?

I haven’t tried using coconut milk, but I definitely will! Coconut milk is great in stews and soups, gives a round and full taste. Maybe the soup will taste even better with that?!

    Hmmm. Broccoli. It is not my favorite type of veggie to eat. It taste bad when cook and worse when its raw. I did not find it appealing but still try it yesterday as my mom brought some from the local market.

    But surprisingly I find it quite ok when mix with soy sour cream and soy cream cheese. Any other soup recipes that does not involve Broccoli?

    I’m not actually a vegan but I am dairy free and gluten free so could definitely use this recipe. I finally have a blender so always looking to experiment with new recipes.

    Just to make sure. Is this gluten free?

    This recipe sounds delicious, and it’s so simple. I’m no vegan, but I don’t mind making vegan food (so long as its good!) I normally prefer doing simple recipes over the long and complicated ones, but eh…if I must, I will do whatever I need to suit my taste buds. Since it is holidays, perhaps I can invest in some of these vegan ingredients, it would be a good health rebound from all the unhealthy holiday crap.

    This sounds pretty good and the recipe isn’t too complicated… I despise super complicated recipes haha. I love the cheddar broccoli soup at Panera Bread (I’m not vegan).
    Would the soup work to make any kind of vegetable soup in place of the broccoli? Such as corn or carrots? Maybe even with some asparagus thrown in?

    Yummy! Looks amazing I LOVE Broccolli (or green flowers as my little on used to call it!) Although im not a vegan I eat of Vegan and Vegetarian food as I have Barratts syndrome (acidy reflux thing) and the dietis good for me. Is this low calorie too as Ive also lost 24 lbs since January so healthier the better!

    I can tell it must be time for lunch because my mouth watered reading the recipe… And I just remembered I have broccoli in my bin that needs to be used so I’m going to make this now. Someone asked about replacements for sour cream. I use yogurt all the time to replace sour cream and I just happen to have some today! Yeay! thank you!

    I have been ill with just about everything you can think of, I saw this documentary on netflex called “What the health”, I am also on multiple medications, thru the program it showed that the food you it, mostly meat and dairy products is what damages your body, they showed a few people who were very sick, that after only two weeks of going vegan, were able to get completely off of their numerous medications, avoid a surgery, stop walking with a walker, needless to say, I am going Vegan. I just want to thank you for your site, and for making it so easy for beginners like me.
